Job description

The Executive Chef is responsible for the overall leadership, quality, consistency and commercial performance of the culinary operation at Viceroy Bali, with particular responsibility for CasCades Restaurant, breakfast, in-villa dining (room service) and destination dining experiences. The role is responsible for maintaining consistently high culinary standards appropriate to a luxury boutique resort, ensuring that every dining experience reflects the quality and personalized service expected at Viceroy Bali. The Executive Chef leads and develops the kitchen team, manages food quality and presentation, develops menus and dining concepts, controls food costs and purchasing, and maintains the highest standards of hygiene, food safety and kitchen organization. 


A key responsibility is to continually develop memorable destination dining experiences, including private villa BBQs, romantic candlelight dinners, themed evenings, special events and other personalized culinary experiences that enhance the guest stay and generate additional Food & Beverage revenue.

Culinary Quality & Guest Experience

  • Maintain consistently high standards of food quality, taste, presentation and consistency across all CasCades culinary operations.
  • Ensure breakfast, lunch, dinner, room service and private dining experiences meet the standards expected of a luxury hotel.
  • Regularly review and update menus, considering seasonality, guest preferences, local produce, food trends, operational practicality and profitability.
  • Personally monitor food quality and presentation through regular tasting, inspection and presence during key service periods.
  • Review guest feedback and work closely with the Food & Beverage and Front Office teams to resolve concerns and continuously improve the dining experience.
  • Ensure dietary requirements, allergies and special requests are handled accurately and safely.
